Kimchi in the Country:
A Day of Nature, Fermentation & Community

Saturday, July 26 | Oxfordshire

Only 15 spots available! Join us for an unforgettable day of hiking, fermentation and community in the beautiful Oxfordshire countryside!

10 years ago, we — Gary, Ruth, and Jenny — made kimchi together for the first time. Gary had spent some time living in Seoul, where the culture of fermentation and sharing food left a big impression, and all three friends worked in sustainability, so valued making things from scratch where possible. That first humble kitchen experiment seeded a tradition we continued a few times each year since — and now, a celebration.

To celebrate reaching our milestone decade, this Summer we’re inviting a small group of people to join us in a day of hiking, kimchi-making, and connection.

🥾 What's the plan?

  • Meet at Goring and Streatley Station by 10:15am (Londoners: we will be on the 9:08 from Paddington).

  • Hike a 4.5 mile woodland trail through the beautiful Chilterns, curated by Ruth. Breathe deep and stretch your legs.

  • Lunch together at a local pub. Pack-or-pay-your-own lunch, and we'll prepare a special kimchi snack for afternoon tea.

  • Kimchi-making workshop in a nearby village hall. We’ll show you how to make our favourite fermented recipes, share stories and skills, and you’ll leave with:

    • Jars of your own handmade kimchi and sauerkraut

    • A fermentation recipe book

    • A deeper appreciation of this delicious, gut-friendly food, and

    • New friends who share a passion for real food made with intention

We can get train travellers to Reading Station for onward journeys from around 5-6pm.

🌱 Why fermentation?

Fermented foods are alive — literally! Rich in probiotics, they support gut health, immunity, and digestion. Plus, making them from scratch is a sustainable, empowering way to reduce waste, preserve seasonal produce, and reconnect with old-world kitchen wisdom.
